Coconuts are highly revered by the local people of Sri Lanka due to their versatility as both medicine and food. The coconuts are hand-harvested to produce coconut milk, coconut flakes, coconut butter, coconut oil, and coconut flour. During processing, once the coconut milk has been removed, the remaining pulp is dehydrated and then milled down into a fine flour. With a deliciously nutty aroma and creamy, soft texture, coconut flour can be used for both sweet and savory recipes. It’s a great gluten-free alternative to regular flour when baking pastries and cakes.
